Happy Cinco de Mayo! For those of you wanting to celebrate today’s Mexican holiday, may I suggest cooking these healthy fish tacos, making this black-bean hummus, and stocking up on these healthy chips, and then whipping up a batch of the below low-cal skinny margaritas for you and your gal pals?

Margaritas are notorious for being high in the calorie department. In fact, just 8 ounces of the stuff can have more than 500 calories, most of it coming from sugar. This is because most margarita recipes use highly caloric, sugary orange-flavored liqueurs, such as curacao, triple sec or Grand Marnier. But it doesn’t have to be that way! Here’s a great better-for-you margarita recipe that has only 112 calories per serving!

Skinny Margarita Recipe

Ingredients
1/4 c fresh lime juice
½ c club soda
2 packets Splenda
1 shot Patron Silver tequila
lime wedge
½ tsp orange extract

Directions
Mix together the orange extract, Splenda packets and club soda. Put crushed ice into a shaker, and pour the liquid over the ice. Add in one shot of tequila and lime juice. Shake thoroughly, then pour into a glass and garnish with the lime wedge. Makes one delicious serving.

How will you celebrate Cinco de Mayo? Just remember to drink responsibly! —Linda LaRue
