I’m totally down with the whole mood foods movement and eating good stuff that makes me feel like my innards are rock stars, so you can imagine how tickled I was when Fit Chef Katy hosted a cooking demonstration at The Market in Santa Monica and told us she’d be sharing tasty salad ideas with us.

The woman seriously had me at spinach, but then she started gabbing with us about the absurdities surrounding us needing to buy salad dressings, and I started to swoon. She demonstrated by taking a little grapefruit juice (be careful if you take medications, she warns!), pepper, a little smoked sea salt from Trader Joe’s and going to town. What?! Smoked sea salt, people!

She sprinkled, and I leaned in to get a good look at probably THE snazziest chef I’ve ever had the privilege of watching live. She definitely encouraged us all to get jiggy in the kitchen with different healthy options. Like for instance, instead of using the blackberries in the recipe below, use a mango sprinkled with chili pepper. Try blueberries. She opened up a whole new world of salad fixin’s for me!

Spinach and Blackberry Salad Recipe

Dressing Ingredients
½ c of olive oil
½ c of balsamic vinegar
¼ c of agave syrup (or to taste)
1 tbsp whole grain Dijon mustard
Salt and pepper to taste

Directions

  1. Put oil, balsamic vinegar, syrup and mustard in a jar with a lid.
  2. Secure and shake until well combined.
  3. Add salt and pepper to taste.

Salad Ingredients
1 bag of baby spinach
1 c fresh blackberries, clean
1 c of goat cheese or feta, crumbled
½ c of cashews
Cooked chicken breast, optional

Directions

  1. Put the chicken, cashews, cheese and half the blackberries in the bottom of a bowl.
    Cover with spinach.
  2. Add about 1/4 cup of dressing and toss gently with tongs.
    Invert bowl onto a serving plate and sprinkle with the rest of blackberries.
  3. Put oil, balsamic vinegar, syrup and mustard in a jar with a lid. Secure and shake until well combined.  Add salt and pepper to taste.
