Our Ultimate Sandwich: The Open-Faced Fruit and Egg Brunch-wich (Please Vote for It!)

So you know how we asked you for your favorite sandwich toppings? Well, we looked through all of those fabulous comments with suggestions, grabbing inspiration here and there and have come up with our ultimate sandwich for National Sandwich Day 2011: the Open-Faced Fruit and Egg Brunch-wich!

If you’re looking for the perfect quick sandwich that’s both savory and sweet that you can eat any time of day, this is it! The Open-Faced Fruit and Egg Brunch-wich is the ultimate breakfast-and-lunch combo sandwich featuring 12 grams of protein, fruit, greens, whole grains, fiber—and deliciousness. A little foodie and a lot tasty, make this healthy sandwich today!

Open-Faced Fruit and Egg Brunch-wich Recipe

Ingredients
2 eggs
2 slices of Arnold Health-full Nutty Grain Bread, toasted
2 tbsp fig butter or other spreadable fruit in black cherry or apricot
1/4 c fresh spinach, chopped
4 small slices of at-room-temperature brie
freshly ground black pepper
salt

Directions
1. Heat a medium skillet coated with non-stick cooking spray over medium heat. Break open the eggs in the pan and reduce heat to low. Cook slowly until the whites are completely set and the yolks start to thicken, but are not hard.

2. While eggs are cooking, spread 1 tablespoon of fig butter (or other spreadable fruit) on each piece of toast. Next, layer 1/8 c of spinach on each piece of bread, followed by the brie slices.

3. When the eggs are cooked and hot, place them on top of the brie slices (thereby helping to melt the cheese—yum!).

4. Sprinkle ground pepper and a little salt over the Open-Faced Fruit and Egg Brunch-wich and enjoy!

    I read this and instantly got up and made myself this sandwich. I hadn’t had my lunch yet and this looked amazing! It tasted just like it looked. Amazing!!!
