Eggs in the Microwave: Egg Beaters Cheese and Herb Mug Scrambler Recipe

It kind of seems too good to be true. Making a hot, protein-rich breakfast in less than 10 minutes IN THE MICROWAVE? But, yep, it’s doable. And we’re showing you how to do it in the below video.

All you need is some nonstick spray like PAM, a wedge of light garlic and herb cheese that’s chopped and a half cup of Egg Beaters 100% Egg Whites (which you know we love). Spray a large mug with nonstick cooking spray, and then mix the rest of your ingredients together in your mug. Next, comes the fun eggs-in-the-microwave part! Microwave it up for a minute, stir and then again for 15 seconds or until the egg whites are set. Boom, baby!     I made this today, and it was really good! I used the Laughing Cow light queso fresco & chipotle cheese wedge.

  3. OMG I remember when I used to microwave eggs when I was in boarding school, yeah, that was…. NOT good. Talk about smellier than EVER!!!! And the smell wouldn’t go away. LOL. Oh and I also remember microwaving a hard boiled egg in a mug once too. Yup, the egg exploded. The mug exploded. The microwave exploded. I exploded with laughter! AH ha ha ha ha!

  4. I really love this idea. I will have to try it very soon. This appeals to me mostly b/c you can make it when traveling – most places have atleast a fridge and microwave! And you can make it at the office – might be smelly but hey – you’re still getting the good stuff!
