Kale and Mushrooms: The Rice Dish

I was never a rice person until I started dating my fella, and then it was rice, rice and more rice. The guy lives for rice. He once asked me why I hadn’t made rice with my meatloaf…What? Who has rice with meatloaf?! Needless to say, he was pretty happy when he found out I had a slew of rice-cooker recipes to try out.

Ingredients
2 tbsp extra-virgin olive oil
4 c tightly packed, finely chopped kale
4 oz cremini (baby bella, baby portobello) mushroom caps, thinly sliced
1/2 c water (adjust as needed during cooking)
Salt and freshly ground pepper, to taste

Directions

  1. Add the oil to the rice cooker, cover and set to cook. When the base of the cooker pot gets warm, add the kale and mushrooms, and pan-fry for about 2 to 3 minutes, until the vegetables become tender. Add water if mixture is too dry.
  2. Add salt and pepper and toss well for another 1 to 2 minutes before serving.
