I was giving a talk on superfoods a few weeks ago, and one of them was sweet potatoes – a woman asked me if I had a good sweet potato fry recipe and I confesssed that I never liked home-made b/c they are never crispy – but this is genius! I bet the egg whites make the difference. I’m going to give this a try – thanks.
