Moroccan and Rollin’ Quinoa Salad Recipe From The Looneyspoons Collection

You know how some cookbooks are overly complicated, totally fancy-pants or have recipes that send you all over creation looking for super-pricey ingredients? Well, The Looneyspoons Collection is not one of those cookbooks. In fact, this healthy cookbook is about the opposite of that. Part-comic, part-cookbook, it’s a true joy to flip through.

Written by Janet and Greta Podleski (they’re sisters), The Looneyspoons Collection brings some silliness and fun to healthy cooking. With recipes like Celine Dijon Chicken, Ladle Gaga, Lord of the Wings and The Thigh Who Loved Me, you’ll get a chuckle out of their 325 recipes and accompanying weight-loss tips. And for our first-ever Fit Bottomed Eats Week, we are thrilled that both Podleskis agreed to share one of their favorite quinoa salad recipes with us. Hooray!

Called Moroccan and Rollin’ Quinoa Salad, they say that they get a ton of letters about this recipe, and everyone loves it so much because quinoa’s such a fantastic fat-fighter with its fiber-and-protein combo. Plus, it’s great for BBQ season coming up and also makes super leftovers to take for lunch. Eat it up, ladies!

I have never heard of them, or this book, but you got me at “part comic, part cookbook.” Now I have to find this and flip through! Unfortunately Amazon doesn’t have any “comic” pictures.

I will definitely make this but will have to drastically reduce the curry and partially reduce the cumin. I’m not quite as averse to them as my husband but it’s something we will have to acquire a taste for gradually.
I do have a ‘Looneyspoons’ cookbook which I saved when I had to downsize my cookbook collection following retirement, sale of house and moving to an apartment. They are great and so entertaining. 😋😄 God bless you and your family. 🕯️
