We’ve been talking about pumpkins a lot lately, but today we’re highlighting a little tuber that has a special place in our hearts: the sweet potato! Rich in vitamin C, vitamin E, beta-carotene, maganese and fiber, we’re crushing on these little orange guys, like, “big time” (said like Peter Klaven) this fall. Read on for five wonderfully delicious ways to eat sweet potatoes!
