The Fit Bottomed Girls Anti-Diet: Gourmet Mini Pizza Delights

If you don’t have a copy of The Fit Bottomed Girls Anti-Diet: 10-Minute Fixes to Get the Body You Want and a Life You’ll Love, you’re missing out. It came out a few years ago, written by Jenn and Erin, the founders of FBG. If you’re an FBG, you need this book.

This isn’t actually a book review, but if it was, 5 stars! But it’s not.

One of the first pieces I immediately jumped into was the recipe section (pages 281-292). I’m not a great cook and definitely not on my FBG cooking game. Long recipes stress me out, as do time-consuming ones. So I skimmed over this section assuming it wouldn’t apply — too healthy (don’t judge), too lengthy or too many unknown ingredients. I was pleasantly surprised how many of the recipes seemed just right and totally doable.

My favorite quickly became “Gourmet Mini Pizzas,” on page 287. Friday pizza night was instilled in my being at a very young age.

The recipe calls for a whole-wheat English muffin, low-sodium pizza or tomato sauce, cheese, and your favorite veggies and protein. From there, you create your favorite pizza — simply spread the sauce and add the toppings. Then you bake it. Easy and delicious. I’m telling you, it’s super tasty and easily customizable to fit each person’s pizza desires. I’m a cheese lover, but my husband likes a few more toppings — no problem. Within minutes, we had delicious, healthy, personal pizzas. They are great for lunches and snacks, and for those of you home with kids this summer, they would love making these, too.

If you haven’t already, buy the book. It’s a great read. Have fun creating and eating your pizzas.

    Hi Fit bottomed girls, I really like your website, but I think this recipe doesn’t help promote good eating.
    Just a thought.
