Three-Ingredient Cinnamon Chex Sweet Potato Toast

Sweet potato toast is all the rage, and topping it with nut butter and Cinnamon Chex adds protein, sweetness and crunch. Yum!
Ingredients
  • 1 large sweet potato, sliced but not peeled
  • 2 tablespoons creamy almond butter (opt for a brand with no added sugar)
  • ½ cup Cinnamon Chex
Instructions
  1. Slice sweet potato into even slices, no more than ½ an inch thick but not less than ¼ inch. (Slices that are too thin will be too floppy to hold toppings, and slices that are too thick will take too long to cook.)
  2. Toast sweet potato slices until lightly browned and easy to pierce with a fork. This can be done in a toaster, oven, or toaster oven, but allow 15-30 minutes. (In my toaster oven at 450 degrees, cooking for 13 minutes on each side was just about right.)
  3. Pour all Cinnamon Chex into a plastic bag, close tightly, and press until cereal is coarsely crushed, if desired. You can also use uncrushed Cinnamon Chex if you prefer.
  4. Spread a thin layer of almond butter on top of each slice.
  5. Sprinkle crushed Cinnamon Chex on top and press lightly to help it stick.
  6. Chow down!
