Robin Miller’s Healthy Chocolate Mousse Recipe

The Buttermilk ‘Fried’ Chicken Recipe that we recently shared was so finger-lickin’ good (and so quick and easy to make!) that we just had to share another one of Robin Miller’s healthy creations from her new cookbook Robin Takes 5. So get your ovens preheated and your bellies ready, dessert lovers. We’re about to get our healthy chocolate-mousse-recipe baking on!

Chocolate Mousse Recipe

When making healthy chocolate mousse from scratch, there are two important tips for a successful outcome. First, make sure to thoroughly clean and dry the mixing bowl and beaters before beating the egg whites. Second, room temperature egg whites beat better than cold ones.

Serves: 12
Prep time: 15 minutes
Cooking time: 20 to 25 minutes

Ingredients
8 ounces semisweet chocolate chips or chunks
8 large eggs
1 tsp vanilla extract
1/4 c plus 2 tbsp confectioners’ sugar

Directions
1. Preheat the oven to 350º F. Coat an 8 1/2-inch springform pan with cooking spray and line the bottom with parchment or wax paper. Set aside.

2. Melt the chocolate in the microwave, a double boiler or a bowl set over a saucepan of simmering water. Meanwhile, separate the egg yolks from the whites and transfer the yolks to a bowl.

3. Beat the yolks until thick and pale. Gradually beat in the chocolate until blended. Fold in the vanilla. Beat the whites with 1/4 cup of the sugar until soft peaks form. Fold one-quarter of the whites into the chocolate mixture, and then fold in the remaining whites. Pour the mixture into the prepared pan, and bake for 20 to 25 minutes, until almost set but still slightly jiggly in the center. Cool the mousse in the pan before cooling completely (still in the pan) in the refrigerator.

4. Dust with the remaining 2 tablespoons of sugar before serving.

Nutrients per serving: 156 calories, 9 grams fat, 4 grams saturated fat, 142 milligrams cholesterol, 16 grams carbohydrate, 5 grams protein, 1 gram fiber and 44 milligrams of sodium.
