1. Easiest Eggs Ever. These are the eggs that will change my life. I hesitate to cook with eggs in the morning because I loathe starting the day off with dirty dishes when I a) Don’t have the time or energy to clean them up, and 2) Let’s be honest, there are still dirty dishes in the sink from the night before. With these eggs? Problem solved. For these, I whisked a couple of eggs, threw in just a splash of milk, a couple of tablespoons of frozen peppers and onions and microwaved them for 2 minutes in a little ramekin. They were perfectly cooked, fluffy as heck and delicious. Throw them on an English muffin for a super-fast breakfast.
