Healthy Lasagna Recipe: The Cheese Filling and Construction
Ingredients
16 oz container 2% cottage cheese (or ricotta)
1 c grated Parmesan
10 oz package chopped frozen spinach, thawed and squeezed dry
2 eggs
½ tsp basil
½ tsp oregano
½ tsp black pepper
6 oz provolone, sliced thin for layering
9 no-boil lasagna noodles
Directions
1. Mix ricotta or cottage cheese, spinach, Parmesan, eggs and spices together in a large bowl.
2. Spread 1 c of the sauce in the bottom of a 13 x 9 x 2 glass baking dish. Place three noodles in a single layer in dish, cover with 1 1/2 c sauce, dollop 1/3 of the ricotta cheese mixture carefully over the sauce and layer with 1/3 of the provolone slices. Repeat two more times starting with noodles. Pour remaining sauce over the top.
3. Cover tightly with foil and bake in a 375-degree oven for 1 1/4 hours; remove foil after 50 minutes. Let stand 20 minutes before serving.
