1. Put plants at the center of the plate. The typical American menu starts with the animal foods, and adds a few plants as an afterthought. You might have a big steak, a pile of mashed potatoes and a little scoop of green peas. But we should be eating the opposite way. We should have a small amount of animal protein, and three-fourths of the plate filled with whole plant foods — whole grains, vegetables, greens, fruits, nuts, seeds, legumes.
