3. Plan your meals around seasonal vegetables. When you come home from work and you ask that age old question, “What’s for dinner?” do you automatically think about the animal food (chicken, beef or fish)? But why not turn the tables? Start your meal planning with veggies first. For example, you may have purchased a really interesting winter squash at the farmers market. So, start there. Maybe you can stuff it with quinoa and hazelnuts. And perhaps you can serve that with simmered lentils and add a side salad of arugula greens and cherry tomatoes. Now that’s an interesting — and health-promoting — meal.
