Chocolate-Chip Pumpkin Muffin in a Mug Recipe
Ingredients
1/4 cup almond flour
1/2 teaspoon baking powder
1 teaspoon cinnamon or pumpkin pie spice
1/2 cup canned pumpkin (unsweetened)
1 teaspoon vanilla
1 egg
1/4 cup semi-sweet chocolate or carob chips (can do more if you want to up the chocolate flavor)
Protein icing (optional — see recipe below)
Directions
1. Combine almond flour, baking powder and cinnamon until well mixed.
2. Add pumpkin, vanilla and egg. Mix until smooth.
3. Stir in chocolate chips.
4. Microwave for three minutes. If the muffin has a firm consistency (not too jiggly, especially in the center), you’re done. If not, cook for another minute.
5. Top with protein icing if you want or just get to eating!
