What it is: It’s a weed! But a really healthy one that’s eaten in salads throughout the Mediterranean — although it’s actually found pretty much everywhere. With a unique and slightly sour and salty taste, it’s becoming quite the darling in the farm-to-table and forage-it-yourself culinary movement.
How it’s healthy: Purslane is a worldly powerhouse. High in vitamin A, C, B and minerals, it also contains melatonin and has more omega-3 fatty acids than any other leafy vegetable. Boom!
How to try it: Look for it outside! It seriously might be growing in your backyard. It’s also popping up in farmers’ markets, natural food stores and foodie menus everywhere.
