Ginger Zucchini Muffin Recipe That Might Help Morning Sickness

GingerZucchiniMuffins I never tried ginger when I was experiencing morning sickness during pregnancy, but it’s supposed to work wonders for those experiencing it. If you’re in the throes of that pregnancy queasiness, you might want to try these ginger zucchini muffins. Whether they’ll cure your morning sickness or not, at least they’re a yummy way to start off the day! Ginger is also said to reduce inflammation, aid in digestion and help with headaches, so have no fear if  you don’t have a bun in the oven — put these muffins in the oven anyway!

Ginger Zucchini Muffin Recipe

1 cup unbleached white flour
1 cup whole wheat flour
1 teaspoon salt
1 tablespoon baking powder
¼ cup The Ginger People Organic Ginger Syrup
2 eggs
½ cup milk
⅓ cup sunflower oil
1 cup grated zucchini
¼ cup The Ginger People Crystallized Ginger

1. Pre-heat oven to 400˚.

2. In a large bowl, combine the first four ingredients (dry ingredients) and lightly whisk to combine.

3. In a separate bowl, combine all the liquid ingredients, whisk until blended.

4. Pour liquid ingredients into bowl with dry ingredients and stir until barely combined.

5. Fold in zucchini and ginger without over mixing the batter.

6. Scoop into prepared muffin pan and bake for 18 to 20 minutes until muffins spring back and have a slight golden color to the tops.

I absolutely love zucchini bread, so I may have to stock up on my ginger to give this one a shot. Such a fun twist on the muffin, and a bonus if it helps queasiness and boosts digestion, right?
