And, guys, these really did taste great! The Red Thai Curry was SUPER delicious. Had tons of coconut flavor, the veggies were good, and the rice was well cooked and sufficiently sopped up the sauce. Just like a good curry should. Also had a little heat to it, which I totally dug.
The Pad Thai was pretty good. The noodles were spot on, the veggies were good and the peanuts had a little crunch. It was a little too sweet for me though. If I’m going to get pad Thai, I’ll probably spring for takeout over this.
You could definitely tell that the Quinoa & Black Beans with Butternut Squash & Chard was the “light” one of the bunch. It tasted the healthiest and definitely had the least salt in it. My husband wasn’t a huge fan, but I liked it. A bit bland but filled with really good chunks of butternut squash and Swiss chard (you can’t see it well, but it’s in there when you mix it around), I was really pleased with it! The black beans were tasty, too.
The Vegetable Pot Pie came out of the microwave overflowing with goodness.
And while the crust did taste a little gummy (like a lot of gluten-free crusts do), the insides were good and veggie-filled. The inside of it was a little thicker than I’d like (it may need more time to nuke than the packaging says), but still. Gluten-free peeps don’t get to have pot pie very often, and this certainly fills a need.
And then there were the brownies. I really tried to temper my hopes with these since they are gluten-free and sometimes weird stuff happens with gluten-free flour, but these were EXCELLENT. Like so good anyone will fall in love with them.
They kind of stick to the sides of the cardboard they come in, but — ahem — that probably has to do more with my impatience with trying them than it does the actual box. Chocolaty, rich and delicious, these are everything you want in a brownie.
