FlapJacked Protein Pancakes: Toddler-Approved and Packed With Protein!

flapjacked-protein-pancakes-585Something to know about me: I am a BIG meal prepper. I usually spend a few hours on Sunday preparing certain foods for the week, pancakes being my main item. I make all of my foods from scratch, which is extremely time consuming. Luckily for me, this FlapJacked protein pancake mix arrived just as I was running out of flour for my pancakes!

This sweet little package came with a fun-size maple syrup so my food prep turned into a family affair! These packages are easy to open and ALL I needed to do was add cold water! That’s it — one cup of water and mix away! It couldn’t be easier. I was able to get eight pancakes just under 1/4 cup of batter each per package.

Our choices were buttermilk, apple cinnamon and banana. All are wonderful, but apple cinnamon is definitely my favorite! There are 15 to 17 grams of protein in each serving, with two servings per pouch. They’ve got between 4 and 7 grams of fiber, depending on your mix of choice, and sugar runs about 8 or 9 grams. Sometimes high protein powders can give foods a gritty taste, but the flavors in these are well-balanced and the pancakes are smooth. The protein did the trick though. My husband and I went to the gym after breakfast and both felt satisfied even after our workout.

These protein pancakes turned out golden-brown and delicious.

Since I made all of them, I froze the leftovers and defrosted them in the toaster oven the following morning. They heated up well and got crispy just how I like them. These are convenient and easy for those days when time is not on your side or you are low on basic ingredients (like flour!). In my house, these are toddler-approved, so that’s always a plus.

You can buy them at various locations around the country or online of course. The 12-ounce packs are available for just under $11, which makes six servings. The 28-ounce packages are available for $20 (15 servings).

Wow, these look great but it’s really hard to tell how many their packages serve. We’d definitely like these.
