Stringy and kinda weird, rhubarb does make for a mean pie, but the buck usually stops there. Without adding a butt load of sugar I could never find a use for those fibrous stalks until I came across this soup recipe.
It’s sweet, but not overpoweringly so. At long last I had found a healthier way to use this vitamin rich vegetable. Or is it a fruit?
