Up, next on my gluten-free baking agenda (tough job): the chewy peanut butter cookies.
Mine turned out not quite as chewy as I expected, but they certainly tasted good. I took these to a party, and people gobbled them up, thinking I was some sort of gluten-free baking genius. (I went ahead and let them believe it. Hehe!) Unlike a lot of other peanut-butter cookies, these didn’t taste like sugar and peanut butter, instead they tasted more like actual peanuts. They had a really strong peanut flavor and with real peanuts in there, even a little crunch, which made these feel homemade for sure, and even a little gourmet! —Jenn
