Not Sure What to Do With Juice Pulp? Make This Dish With Your Leftovers!

Tish got a juicer a year or so ago, and whenever I’m out in LA visiting her, she almost always makes us juice. (I’m so lucky!) Problem is, when she’s done, there’s all of this beautiful pulp left over. And we’re not talking like a tablespoon or two, we’re talking cups of fibrous veggie stuff and lots of fiber that’s been filtered out through the juicing process. Now, we know juicing is good for us, but what’s one to do with all of the leftover juice pulp? It seems sad to just throw it away …
Tish and I have seriously had the conversation SO many times about what to do with the pulp. Bake it into muffins? Add it to pasta sauce? Throw into stir-fry? Eh, we just weren’t sure beyond composting it. So when we got an email from Foxy with full-out recipes for making yummy green juice and then a recipe that uses the leftover juice pulp in a tasty and healthy new way, we were stoked! High-fives and pelvic thrusts all around. (Why do we celebrate with pelvic thrusts? I don’t know, but we do.)

What to Do With Juice Pulp

Juice Recipe: Garden Salad SuperJuice Recipe

Ingredients
3 leaves Foxy romaine
1 stalk Foxy celery
1/2 bunch parsley
4 stalks Foxy chard
2 tablespoons ranch dressing
Directions
1. Juice all ingredients except dressing.
2. Pour into a glass and stir in ranch.
3. Keep pulp.


Juice Pulp Recipe: Tabbouleh

Ingredients
1/2 cup uncooked quinoa
1/4 cup fresh lemon juice
3 tablespoons extra virgin olive oil
1 cup Italian parsley chopped
1 cup Garden Salad SuperJuice pulp
1/2 cup mint leaves, chopped
1 pint cherry tomatoes, quartered
1 small English cucumber, seeded and diced
2 cloves garlic, minced
1 1/2 teaspoon salt
pepper to taste
Directions
1. Prepare quinoa per instructions. Set aside.
2. In a small bowl, whisk lemon juice, olive oil, garlic, salt and pepper. Set aside.
3. In a large bowl, combine juice pulp with the remaining ingredients and mix with the cooled quinoa. Pour the lemon juice mixture over the salad and toss. Let set 5 minutes before serving.
