Turn Your Leftover Juice Pulp Into Hummus With This Recipe

Yesterday we had you pelvic-thrusting with happiness (Still just us doing that? Oh, well!) with Foxy’s juice pulp recipe for tabbouleh and for answering the question: What do I do with juice pulp?! Today, Foxy is giving us another juice pulp recipe — plus a recipe for green juice to start it off with. Say hello Super Human Hummus!


What to Do With Juice Pulp: Make Hummus!

Juice Recipe: Green with Envy SuperJuice

Ingredients
2 stalks Foxy kale
1/2 large English cucumber
3 leaves Foxy romaine
2 sprigs mint (stems removed)
1/2 inch peeled ginger
1 tablespoon lemon juice
Directions
Juice in order and save the pulp.

Juice Pulp Recipe: Super Human Hummus

Ingredients
16 ounces hummus
1 cup Green with Envy SuperJuice pulp
2 tablespoons extra virgin olive oil
salt to taste
lemon juice to taste
Directions
1. Combine hummus with juice pulp. If the hummus is thick add 1 tablespoon of water until desired consistency is reached.
2. Drizzle with olive oil and serve with Foxy celery or another healthy dipping item.
