Recipe: Tofu and Berry Homemade Popsicles

Kids and popsicles go together like summer and heat. Popsicles and summer also go together very well — which is why I love the idea of homemade popsicles. Sure, it devolves into a totally sticky mess as soon as the temperature hits 80, but you just can’t pass up the homemade popsicles, particularly when they’re made to be just a little extra protein-packed and with real fruit like these that are created by Debi Mazar and Gabriele Corcos, stars of the Cooking Channel’s show Extra VirginSo dust off your homemade popsicle molds and get freezing!

Homemade Popsicles

Tofu and Berry Homemade Popsicles Recipe

Makes 6 popsicles (3 ounces each)

Ingredients
1/2 package (7 oz) House Foods Tofu Organic or Premium Soft
2 cups strawberries or other berries, hulled and sliced
1/2 cup super fine sugar
1 1/2 teaspoons pure vanilla extract

Directions
1. Add the berries to a bowl and toss with the sugar and the vanilla. Let sit out for 20 minutes so they become juicy.

2. Add fruit mixture to a blender or food processor and puree until smooth. Add the tofu and blend again until incorporated.

3. Divide the mixture into six popsicles molds. Freeze until firm, for about 4 hours.
