My mother-in-law got me one of these brown sugar disks ($12.99) a few months back, and it’s been such a brilliant addition to my kitchen. A little terracotta disk that you soak in water, you simply put it in your brown sugar container and boom! The brown sugar stays moist enough to work with — no annoying clumps. Every few weeks you need to check it to make sure it’s still moist (and re-soak if not, of course), but I’ve found it lasts just long enough to get me through one sporadic baking adventure to the next.
