Raw Carob + Coconut Squares That Are Full of L-O-V-E!

It’s funny. When people think of “raw,” “gluten-free” or “vegan” foods, they usually think bland, boring and tasteless. But I swear — especially when it comes to desserts — sometimes it’s the raw, gluten-free and vegan ones that are amazingly dense, filling, moist, rich and delicious. (I pretty much credit that to copious amounts of good-for-ya fatty nut butters and coconut oil like this paleo fudge has!) And this coconut squares recipe from Karolina Eleonóra’s new ebook Snack Smarter certainly fits that bill.


Yes, you may have to hit up your favorite all-natural grocery store to stock up on a few ingredients, but these coconut squares are worth the extra trip. Karolina Eleonóra is a raw dessert chef that specializes in nut-free and cacao-free recipes, so she knows what’s up when it comes to dessert. Plus, you can even freeze these coconut squares — just like the other recipes in her new book — so that you always have a healthy and delicious snack on hand. And, because Karolina is all about the feel-good love, these coconut squares are infused with a healthy dose of L-O-V-E through superfoods.

People who try these often say that they get tastier and tastier the more you eat. I agree. If any little raw square fudge would be extra loving, it’s these. These are not-so-sweet crunchy fudge (sweetened with carob, lúcuma and mesquite only) that are nut-free, cocoa-free, gluten-free, raw and vegan. Enjoy these yummy coconut squares!
Ingredients
  • 100 grams cacao butter, about 0.5 cup as melted
  • 4 tbsp carob powder
  • ⅛ tsp Himalayan salt
  • 0.5 tsp Vanilla from pod
  • 4 tbsp mesquite
  • 5 tbsp lúcuma
  • 4 tbsp tahini
  • 4 tbsp virgin Coconut oil
  • 0.5 c coconut chips or shredded coconut
Instructions
  1. Melt the cacao butter in a water bath.
  2. Add it together with the rest of the ingredients (except the coconut chips) to a food processor and process until you have a moist dough.
  3. Add the coconut chips and stir by hand.
  4. Coat a 4- x 7-inch square container with plastic film and pour the dough using a spatula to even the surface. Put it in the fridge to harden before you cut squares.
Notes
High melt-in-sun factor. If you need them throughout the day when you’re out running, try this trick: Place a flat ice pack in a plastic container, place some parchment paper over and put the Love U Right Back Carob + Coconut Squares on top. Prepare by placing them in the freezer before you take them with you.
