10-Minute Egg-Stuffed Sweet Potatoes With Avocado

You know how much we love sweet potatoes. You also know how amazing eggs are as a quick go-to protein source. And, you’re aware of how much we love our healthy fats — and like to eat the colors of the rainbow.
Which is exactly why this Egg-Stuffed Sweet Potatoes with Avocado recipe is, well, not to brag, but totally amazing!

As part of the new ALDI A Guide to Eating By Color series (remember how much we adore ALDI?!), we set out to create a recipe that took just 10 minutes to make, yet was filled with a variety of healthy foods that spanned the colors of the rainbow. And this stuffed potatoes recipe hits a lot of different colors: orange, red, green, white, yellow! We almost got them all!
And, guys, this dish is so satisfying and filling, despite being uber good for you. An obvious play on the usual stuffed potatoes you see at so many restaurants that are, ahem, not so great for you, our twist is complete enough to make for a whole healthy meal! We swapped in sweet potatoes for white ones (color power!), and then stuffed it full of healthy ALDI eggs. On top, it’s a choose-your-own flavor adventure with pretty much as much salsa, Greek yogurt (instead of sour cream to boost protein and give you some of those awesome probiotics!), avocado and salsa as you want. (And note: while we didn’t top ours with hot sauce or other fixin’s like black olives and jalapenos, we bet those would be awesome, too!)

10-Minute Egg-Stuffed Sweet Potatoes With Avocado Recipe

Ingredients
1 large sweet potato
1 large Goldhen egg
Stonemill Essentials salt
Stonemill Essentials pepper
1 tablespoon cilantro
1/4 of an avocado
2 tablespoons Friendly Farms Plain Nonfat  Greek Yogurt
2 tablespoons SimplyNature Organic Thick & Chunky Medium Salsa
Directions
Give your sweet potato a nice and gentle scrub.

Pop it in the microwave, following your microwave’s settings for cooking a potato.

As your sweet potato cooks, beat your egg with a little salt and pepper.

And chop your cilantro and avocado.

Once the sweet potato is cooked (a fork pierces it easily), carefully remove the sweet potato from the microwave (it’ll still be hot!), and cut a long slice down the middle without cutting through the whole potato. Scoop out the inner flesh into a small bowl and mash.

Add the sweet potato flesh to your eggs and mix well.

Heat a small pan coated with nonstick cooking spray over medium heat and scramble your egg-sweet-potato mixture.

Lastly, assemble your stuffed sweet potato! Place the egg mixture in first.

Then top with the cilantro, avocado, salsa and Greek yogurt.

One more fab thing about this stuffed sweet potatoes recipe? You can get all of the ingredients at ALDI for an insanely low price. This recipe makes just one serving, but you can easily double, triple or quadruple it. I bought all the ingredients for these stuffed sweet potatoes at ALDI — plus a bunch of dark chocolate (their chocolate is the best!), fresh orange juice, almond milk, canned cherries and gum for about $25. That’s it! And I certainly have more goodies to make plenty more stuffed sweet potatoes … which I plan on doing, like, every day this week. (Yes, I’m obsessed.)
