The mason jar salad is a pretty brilliant invention. Done the right way (which we’ll show you!), it allows you to prep a tasty salad in about 10 minutes and then pop it in the fridge to eat whenever you’d like — without it getting soggy! The secret is in the layering — dressing on the bottom, harder veggies on top of that, less hard veggies, then beans, cheese/protein, softer veggies and fruits, nuts, and finally your salad greens on top! Then, when you’re ready to eat, you simply shake your mason jar salad into a bowl, grab a fork and get to chowing down!

Rainbow Mason Jar Salad With Orange-Almond Dressing Recipe

Ingredients
1/2 orange, peeled
1 tablespoon SimplyNature Almond Butter
2 tablespoons Nature’s Nectar 100% Pure Squeezed Orange Juice
1 red bell pepper
1/2 cup Dakota’s Pride Great Northern Beans, drained and rinsed
1 large Goldhen egg, hard-boiled
3 Suntree Dried Pitted Plums, diced
1/4 cup Southern Grove California Slivered Almonds
2 cups SimplyNature Organic Baby Spinach
Directions
A tasty homemade salad dressing doesn’t take much time at all, and this Orange-Almond Dressing is proof.

First, drop half of a peeled orange into a high-powered blender. Then add almond butter and orange juice.

Blend on high until creamy and well combined. Pour into the bottom of your empty mason jar.

Next, grab your red bell pepper and chop it.

Place into your mason jar as the next level.

Add your beans.

And then chop your hard-boiled egg and add that, too!

Chop your dried plums, and add those to the mason jar.

Almost done! Get those almonds in there.

Pack in that spinach, put a lid on it, and you’re done!

Store it in the fridge for the whole day (if you need to keep it longer than that, wait to add your egg, plums and almonds until the morning of the day you plan to eat your salad). Once ready to munch, pour into a bowl and go to town!
