Have you ever met an ice cream sandwich you didn’t like? Us either. Enjoy these easy-to-make, (and easier to enjoy) creative twists to the classic American treat with these delicious sweet and savory flavor combinations.
Ingredients
  • Reynolds Parchment Paper
  • 8 Shortbread Cookies, homemade or store bought
  • 1½ cups strawberry ice cream, homemade or store bought
  • ½ cup fresh basil leaves, chopped or whole
Instructions
  1. Gather your preferred strawberry ice cream and shortbread cookies. If you're adding fresh strawberries or chopped basil into your ice cream, combine the three ingredients in a bowl.
  2. Using individual, cut-up squares of parchment paper (enough to wrap the sandwich up with), lay a cookie face down on the parchment paper and scoop ice cream onto the middle of the cookie
  3. Place second cookie on top of the ice cream, lightly pressing them together to create a sandwich. If using whole basil, add in this step. Garnish with your favorite toppings, as desired.
  4. Pick up your sandwich and wrap the parchment paper square around the bottom of your ice cream sandwich to make it easier to hold and less messy.
Notes
​-To give your homemade ice cream sandwiches some handmade flair, mix freshly chopped strawberries and basil into vanilla ice cream and sandwich between two freshly baked shortbread cookies.
-If you need a pretty dessert on the fly, use pre-made strawberry ice cream, and layer full basil leaves between store-bought shortbread cookies and the ice cream.
-If you want to lighten up your ice cream sandwiches, opt for a vanilla frozen yogurt or strawberry sorbet in place of premium ice cream.
-For portion control, make your cookies bite-sized so you can keep your calories to a minimum while still indulging in your favorite treat.
