Hungry Girl’s Fruity Bruschetta Recipe

fruitybruschettarecipeHungry Girl is at it again! The oh-so-popular diva of calorie reduction has a book out called Happy Hour . It’s a book of entertaining snacks for entertaining. For years I’ve let Jenn feed me delicious recipes she’s snagged from the HG books, so I figured it was time for me to go on ahead and see what yummies I could whip up. So I pulled out the Sassy Veggie Egg Rolls and the Fruity Bruschetta to give them a whirl.

Don’t get me wrong, I LOVE me some Hungry Girl recipes, but those sassy egg rolls had attitude I didn’t really care for. There is nothing worse than spending time in the kitchen — chopping and mixing, tasting and baking — only to produce something that only the trash will like. I know…ouch.

I realize I’m one of those gals who wants to have her cake and eat it, too, but I don’t think it’s asking too much to have food that’s both healthy and delish. The egg rolls tasted like watery soy sauce crunch. Maybe if I were an intuitive chef I could have saved my  hard kitchen work, but alas, I follow recipes to the T because I don’t have one cooking-guru bone in my body. Therefore, this little happy hour treat gets two forks down from me.

The fruit bruschetta on the other hand: Two forks up and click ’em together! There needs to be a new word for tasty stuff that’s healthy. I mean, my eyes rolled back in my head, and I wiggled. I don’t wiggle often. They were super easy to whip up, too. (They took me less than 20 minutes!) I’ve made the bruschetta five times since trying the first batch, and every time I’m the wife/friend of the year when I mention that two slices of the heavenly stuff are only 78 calories. I like dishes that earn me cool points. (And I totally forgot about the egg roll boo-boo.)

Delicious as an appetizer or even as a dessert, liven up your next gathering with this Fruity Bruschetta recipe, reprinted with permission from Hungry Girl.
Ingredients
  • 1 mango, diced
  • 1 small banana, diced
  • ½ c strawberries, diced
  • 1 French baguette about 2 inches in thickness and at least 6 inches long
  • 2 tbsp light whipped butter or light buttery spread
  • ½ tsp cinnamon
  • 2 no-calorie sweetener packets
  • ⅓ c fat-free fruit-flavored yogurt (your choice)
Instructions
  1. Preheat broiler.
  2. Stir all fruit together in a bowl. Cover and refrigerate.
  3. Using a sharp serrated knife, carefully cut sixteen ¼-inch-thick slices from the baguette. (Save any remaining bread for another use.) Lay bread slices in a single layer on a large baking sheet.
  4. Add the cinnamon and sweetener and mix well. Brush the tops of the bread slices with butter mixture.
  5. Place the baking sheet about 5 inches beneath the broiler and let broil for 3 minutes, or until tops are slightly bubbly.
  6. Evenly distribute chilled fruit among the bread slices. Top each with a teaspoon of yogurt.
  7. Enjoy!!! Take one for yourself and share the rest with seven of your closest friends!

    I have problems with Hungry Girl Recipes usually because I really dislike that she uses SO many processed foods (even if they are fat-free, low-carb, whatever) in her recipes and they call for SO much cooking in the microwave! Ew. This one isn’t so bad, but I would still probably swap the sweetener packets for a small amount of raw sugar or honey.

    Chrissy, it’s funny you mention that. When I made this recipe I was sans microwave so I had to actually hit the butter up on the stove…For the microwave skeptics I find there’s always a creative “old school” way. I’m not scared of raw sugar either so three snaps for the substitution advice! 😉

    I think Hungry Girl would be proud. You’re experimenting and adding your own POV. Growl…
