The One Breakfast Meal You’re Not Eating But Should Be

You know how much we love our big-ass salads. So a giant, filling breakfast salad?! Well, that certainly got our attention.

The full breakfast salad recipe is over at Fit Bottomed Eats, but , guys, it’s brilliant. Sure it does take a little more planning and is probably best suited to a weekend, but how great of an idea is it? And, if you roasted a bunch of veggies one night and had leftovers, you could totally wake up and make this in a hurry.

So often we think of breakfast as limited (but yummy fare): cereal, toast, eggs, oatmeal, etc. But who’s to say we shouldn’t have something a little more savory and veggie-filled (besides a smoothie)? Not us! We’ll definitely be trying this whole breakfast salad thing out!
