A Flatout Simple Lunch Idea

The amount of stress I sometimes feel about choosing what to have for lunch is straight up embarrassing. I can easily waste 30 minutes pacing between my pantry and refrigerator waiting for some sort of delicious inspiration to strike.
Which is why I love leftovers — I’ll often make far more than I need for dinner just to ensure I have plenty of leftovers for a lunch or three in the days to follow.
flatout wrapsAnd if I’m really smart, I’ll map out some ways to mix ’em up so I’m not eating the exact same thing every day. Sometimes that means mixing in some roasted veggies and beans with quinoa or brown rice, and sometimes, it’s all about sandwich-ifying. (What? If that’s not an actual word yet, it should be!)
Now, I enjoy a thick piece of crusty bread as much as the next girl, but that’s not usually so appealing to me in the middle of the day. For lunch, I prefer to keep the bread a little lighter, so I really dig wrapping up … well, just about anything in a piece of Flatout Bread. I’ve been a fan for a long time — making a pizza with it? Kind of life changing! — and it’s pretty much the fastest, easiest way to create a tasty, healthy lunch with basically whatever happens to be in my fridge.
Not sure what I mean? In the last couple of weeks alone, I’ve wrapped the following in Flatout Bread:

  • Leftover salad with hummus and havarti
  • Leftover sweet potatoes, black beans and chilies in adobo with some avocado, Mexican cheese and plain Greek yogurt
  • Roasted veggies (both warm and cold)
  • Almond butter and local honey
  • Scrambled eggs (which weren’t technically a leftover, I guess, but they were delicious)
  • Chipotle chicken slices with leftover salad (well, my husband ate this, but still, you get the idea!)
