Apple Crisp Recipe (Using Cereal!)
It might still be sweltering hot in many parts of the country — I know it sure is here in Florida! — but as soon as people start talking about back to school and football games, I start thinking about warm, fruity baked desserts. I mean, I’ve never met a cobbler or a crisp I didn’t like, but the ones I like most are the ones that are really, really easy to make … and, of course, have some nutritional heft to them, too!
This recipe came my way courtesy of Weetabix, which is a breakfast cereal that’s apparently pretty popular in the UK, but only now making its way stateside. It’s a little funny looking — it comes in two rows of biscuits rather than loose flakes — but, to be honest, that’s super handy for portion control! I’ve been crushing one up with Greek yogurt and fruit, but since each serving of two biscuits packs some solid nutrition (130 calories, 1g fat, 4g fiber, 4g protein and just 2g sugar), I’m all for finding some different ways to enjoy it!
Maple Fruit Weetabix Crisp
- 4 Weetabix biscuits, crumbled
- 4 cups (1 L) chopped fruit (e.g. peeled apples and pears are a great combination)
- ¼ cup (60 mL) chopped pecans
- ½ tsp. (2.5 mL) cinnamon
- ¾ cup (175 mL) brown sugar
- 2 tbsp. (30 mL) flour
- ¼ cup (60 mL) maple syrup
- In a mixing bowl, combine sugar, cinnamon, pecans and flour.
- Toss with chopped fruit. Spread the mixture in a small casserole dish.
- Cover with crumbled Weetabix and drizzle with maple syrup.
- Bake uncovered at 350ºF for 20-25 minutes or until fruit is tender.
- Serve warm. Ice cream is a nice touch.
