I was recently confronted with an array of sugar-filled, processed no-bake cookies. They looked delicious, but I knew they weren’t the best choice, so I decided to try to concoct my own version of no-bake cookies — a healthier version.
After a few major fails (we’ve all been there, right?), I introduced my family to this delectable, chocolaty goodness. And the best part? I had no reason to resist.

6-Ingredient, Healthy No-Bake Cookies

Ingredients
- 1 cup natural peanut butter or almond butter (I do half and half)
- ¾ cup honey
- ½ cup coconut oil
- 2 teaspoons vanilla
- 3 cups quick oats
- 6 tablespoons cocoa powder
Instructions
- Combine peanut butter, honey, and coconut oil in a sauce pan and warm gently on stove top.
- Add in the vanilla, oatmeal, and cocoa.
- Remove from stove-top once all ingredients are in the pan and stir well.
- Drop by the spoonful onto parchment paper and let cool.
- Store in an airtight container in the refrigerator.
