6-Ingredient, Healthy No-Bake Cookies

I was recently confronted with an array of sugar-filled, processed no-bake cookies. They looked delicious, but I knew they weren’t the best choice, so I decided to try to concoct my own version of no-bake cookies — a healthier version.
After a few major fails (we’ve all been there, right?), I introduced my family to this delectable, chocolaty goodness. And the best part? I had no reason to resist.

6-Ingredient, Healthy No-Bake Cookies

Ingredients
  • 1 cup natural peanut butter or almond butter (I do half and half)
  • ¾ cup honey
  • ½ cup coconut oil
  • 2 teaspoons vanilla
  • 3 cups quick oats
  • 6 tablespoons cocoa powder
Instructions
  1. Combine peanut butter, honey, and coconut oil in a sauce pan and warm gently on stove top.
  2. Add in the vanilla, oatmeal, and cocoa.
  3. Remove from stove-top once all ingredients are in the pan and stir well.
  4. Drop by the spoonful onto parchment paper and let cool.
  5. Store in an airtight container in the refrigerator.
