Vitamin C Fiesta Smoothie
Recipe type: Drinks
Cuisine: American
Serves: 2
This smoothie will give your body a rawkin’ immune boost with more than 842 percent of the daily recommended amount of vitamin C (that’s more than 400 percent per serving)! Red bell peppers, oranges, strawberries and kiwifruit all pack a powerful vitamin C punch, which is just what you need when you’re fighting a cold. It’s best to power up on the vitamin as soon as you start feeling cold symptoms to recover the fastest.
  • 2 cups kale, stems removed
  • 1 cup unsweetened coconut water
  • 1 orange
  • ½ cup sliced red bell pepper
  • 2 cups strawberries
  • 1 kiwifruit, halved
  1. Blend the kale, coconut water and orange until smooth.
  2. Add the bell pepper, strawberries and kiwifruit and blend again.

I never think to put things like bell peppers in smoothies, do you? Gonna have to start doing that on the regular! —Jenn

Kale, spinach and pumpkin are about as veggie as I go with smoothies.
