3-Ingredient Gluten-Free Veggie Burgers
It’s burger season and this, my Fit Bottomed foodie friends, may just be the easiest and healthiest veggie burger recipe ever! The secret ingredient is flaxseed meal, which not only keeps the burger from falling apart, but also contains a trifecta of super healthy components.
If flaxseed meal isn’t a part of your diet, well, it should be. A single serving of flaxseed meal, also marketed as milled or ground flaxseed, contains both soluble and insoluble fiber, a hearty dose of natural anti-oxidants (seven times more than any other plant-based food) and a high level of alpha-linolenic acid (this little goody turns into omega-3 fatty acids once inside the body). All that goodness, plus more from three measly ingredients!
Whole flaxseed passes through the body undigested, so make sure you read the label carefully. It’s easy to incorporate flaxseed meal into your diet. Stir a couple of tablespoons into your yogurt, oatmeal or smoothie to reap the benefits. Store unused flaxseed meal in the freezer to keep it fresh.
- 1 cup grated zucchini
- 1 cup black beans, rinsed and drained, mashed with fork
- 6 tablespoons flaxseed meal
- 1 teaspoon steak seasoning
- salt and pepper to taste
- Mix all ingredients in a medium size bowl and let rest for at least 15 minutes.
- Form into four patties.
- Spray flat griddle with cooking spray and cook over medium heat for five minutes on each side or until golden brown.
Crumble leftover burgers into taco shells for a quick and easy lunch.
