A Few Ideas for Gourmet Grilled Cheese

When my husband and I first met, we were young and silly and definitely not great cooks. But we were both pretty solid at making one important dish: grilled cheese. We even had a grilled cheese-off one night, each making a sandwich using our preferred ingredients. The verdict? They were made of bread, lots of melty cheese and butter. Both were delicious because of course they were.
But as I’ve gotten (marginally) older and considerably more adventurous in the kitchen, I’ve learned that, while there’s certainly a time and a place for your traditional grilled cheese (like on my couch, snuggled up with a blanket and a mug of hot tomato soup while I catch up on my shows on a rainy evening), there are also a ton of really interesting — even gourmet! — options out there worth exploring.
