Cooking With Cold-Brew

Are you a cold-brew enthusiast? If not you will be by the end of this post! Seriously, the cold-brew process is the best thing that has happened to coffee since the to-go cup and if you haven’t tried it yet, you don’t know what you are missing.
For those of you who’ve failed to take notice of the hot (or should I say cool) trend, cold-brew is the process of making coffee without heat. The result: smooth, rich unadulterated flavor with lower acidity and no bitter aftertaste. The coffee can be enjoyed hot or cold and, as I recently discovered, is indispensable in any recipe that requires an extra jolt of flavor.
When the folks at Chameleon Cold-Brew sent me a box of samples (caramel, mocha, black, espresso, Texas pecan, oh my!) I knew I’d be spending the next few days in the kitchen. Out came the coffee-inspired recipes: mocha mousse, espresso brownies and coffee-marinated short ribs. The Chameleon Cold-Brew delivered. It amped-up the coffee flavor in my favorite recipes, yet somehow still managed to remain perfectly balanced and mellow.
