Beans and Rice Recipe

I feel like a lot of us are opening up our pantries these days and looking for something … anything … tasty to throw together.

I absolutely don’t want to go to the grocery store unless I have to, so I’ve been stretching my culinary muscles to make the most of pantry essentials. Because if there’s ever been a time to embrace being basic, this is it.

And you don’t get much more basic than beans and rice. It’s a staple in so many cultures’ cuisines for good reason — it’s filling, it’s nutritious, and it’s hella tasty.

We got this beans and rice recipe from Elior North America’s VP of Culinary Development Chef Paul Basciano. He’s been sharing some easy-to-make, minimal ingredient recipes for all of us who are sheltering in place, and this is one of those recipes that’s just perfect. It’s made with stuff you probably already have in your pantry, and the recipe itself is flexible enough so that you can use whatever seasoning or specific beans/rice you have on hand.

Basically, use what you got! (And if you’ve got a can of diced tomatoes or veggies/greens, try adding them in, too!)

Beans and Rice Recipe

INGREDIENTS

  • 2 1/4 cup water
  • 1 cup rice
  • 1 tablespoon olive oil
  • 1 onion
  • 2 teaspoons seasoning (sazon, adobo, etc.)
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon black pepper
  • 1 can beans
  • 1 small can olives (ideally green)

INGREDIENTS

  1. Combine water, rice, and olive oil in a pot and bring to a boil. Mix in onion, seasoning, and black pepper.
  2. Reduce heat to low and continue cooking for 10 to 12 minutes.
  3. Add beans and olives, and continue cooking until liquid is absorbed — about 10 minutes.
  4. Mix and serve.
