6-Ingredient Gluten-Free Peanut Butter and Chocolate Chip Cookies
A lesson I’ve learned when cooking awesome yet healthy food over the years? Getting fancy is fun, but sometimes simple is best.
Also? I know gluten-free desserts get a bad rap — and some are terrible — but I swear that some of the tastiest desserts I’ve ever had have been sans wheat and sometimes sans any kind of flour at all. Like these six-ingredient peanut butter chocolate chip cookies from Detoxinista that I have recently been obsessed with. One night I had a craving for a peanut butter and chocolate chip cookie and hit the Google for a quick and easy gluten-free recipe. I found hers, and it was love at first batch.
With only six ingredients (peanut butter, honey, egg, baking soda, sea salt and chocolate chips — that’s it!), I had everything on hand to make them — and they turned out so good that I’ve kept everything on hand in my pantry since just in case a craving kicks in again. Which happens, you know, about every other week or so.
The consistency of these peanut butter and chocolate chip cookies can very quite a bit from batch to batch depending on the brand of peanut butter you use, but they always taste good. And they always come out moist and cookie-like — you’d never know there was no gluten or flour, at all. I’ve tricked my friends with them, taken them to parties to have only crumbs left and eaten them with a smear of chocolate peanut butter on top (double the flavor, double the fun) in the privacy of my own living room. All. Awesome. I highly recommend.
