10-Minute Egg-Stuffed Sweet Potatoes With Avocado

This egg-stuffed sweet potato recipe is healthy, filling and a snap to prepare!

  • 1 large sweet potato
  • 1 large Goldhen egg
  • Stonemill Essentials Salt
  • Stonemill Essentials Pepper
  • 1 tablespoon cilantro
  • ¼ of an avocado
  • 2 tablespoons Friendly Farms Plain 0%Nonfat Greek Yogurt
  • 2 tablespoons SimplyNature Organic Thick & Chunky Medium Salsa
Instructions
  1. Give your sweet potato a nice and gentle scrub.
  2. Pop it in the microwave, following your microwave’s settings for cooking a potato. As your sweet potato cooks, beat your egg with a little salt and pepper. And chop your cilantro and avocado.
  3. Once the sweet potato is cooked (a fork pierces it easily), carefully remove the sweet potato from the microwave (it’ll still be hot!), and cut a long slice down the middle without cutting through the whole potato. Scoop out the inner flesh into a small bowl and mash.
  4. Add the sweet potato flesh to your eggs and mix well.
  5. Heat a small pan coated with nonstick cooking spray over medium heat and scramble your egg-sweet-potato mixture.
  6. Lastly, assemble your stuffed sweet potato! Place the egg mixture in first. Then top with the cilantro, avocado, salsa and Greek yogurt.
  7. You’re ready to EAT!
