The Ultimate Chopped Salad With Agave Mustard Vinaigrette

Delicious enough as a main course, this Ultimate Chopped Salad With Agave Mustard Vinaigrette is tangy, savory a little sweet and full of healthy flavors!
Ingredients
  • Chopped Salad Ingredients
  • 1 large romaine heart
  • 2 pieces of bacon
  • ¼ cup red onion
  • 2 stalks of celery
  • ⅓ large head of broccoli
  • ⅓ large head of cauliflower
  • ½ avocado
  • 2 hard-boiled eggs
  • ⅓ cup gorgonzola cheese
  • Agave French's Mustard Vinaigrette Ingredients
  • 2 tablespoons French’s Yellow Mustard
  • ¼ cup red wine vinegar
  • 2 sprigs thyme
  • 1 garlic clove
  • 4 ounces tofu
  • 1 tablespoon agave nectar
Instructions
  1. Fry up the bacon. While cooking, chop your romaine heart.
  2. Make sure to chop the pieces of lettuce so that they're bite-sized. Also chop the red onion and celery.
  3. Once bacon is nice and crispy, drain on paper towels and chop when cool.
  4. Chop broccoli, cauliflower, avocado and eggs.
  5. Add all chopped veggies to a large bowl and add cheese.
  6. Top with bacon.
  7. Now it's time to make the agave mustard vinaigrette! In a high-powered blender or food processor, add French's Yellow Mustard.
  8. Next add red wine vinegar, thyme, garlic, tofu and agave nectar. Blend on high until smooth and creamy.
  9. Pour liberally over your chopped salad, reserving two tablespoons of mustard vinaigrette.
  10. Gently mix to coat the chopped salad evenly with the agave mustard vinaigrette!
  11. Divide evenly into two bowls, and top with remaining mustard vinaigrette. Enjoy!
Notes
