10-Minute Mango-Blueberry-Lime Parfait Recipe

This yummy parfait recipe takes just 10 minutes to make and is super healthy!
Ingredients
  • ½ mango
  • 1 lime
  • ½ cup Friendly Farms Plain Nonfat Greek Yogurt
  • 1 tablespoon SimplyNature Organic Light Agave Nectar
  • ¼ cup blueberries
  • 2 tablespoons Baker's Corner Coconut Flakes
  • 2 tablespoons Southern Grove Sliced Almonds
Instructions
  1. Chop your mango into bite-sized pieces and set aside.
  2. Cut your lime in half, and zest.
  3. Combine half of the lime zest with your Greek yogurt, agave and the juice of half of your lime. Mix well.
  4. Add half of your blueberries to the bottom of your glass. Cover with half of your Greek yogurt mixture. Top with half of your coconut and almonds. Add mango, then another layer of the Greek yogurt mixture, coconut and almonds. Take the remaining blueberries and mango chunks and alternate them around the rim. Sprinkle the remaining lime zest on top!
Notes
Feel free to eat this right away (it's delicious), or pop it in the fridge for a few hours. It'll last in the fridge for a good 24 hours.
