Fried Dumpling Salad: Twigim Mandu Salad

Frozen dumplings are a convenient ingredient that are used in many different ways. Great as a snack, as part of a main meal or as late night bite. Crispy fried dumplings go well with a fresh salad. You don't have to use baby greens, any salad leaf will work just as well.
Ingredients
  • Salad
  • 5 pieces of Mini Wontons (dumplings)
  • 30 grams baby greens
  • 3 ml olive oil
  • 1g lemon juice
  • a pinch of salt
  • a pinch of pepper
  • cooking oil
  • Dumpling sauce
  • 10g dark soy sauce (jin ganjang)
  • 20 ml water
  • 10 ml vinegar
  • 5g mirin
  • 5g sugar
  • 0.2g dried kelp
  • 0.2g dried bonito
  • 1 ml orange juice
  • 1g lemon zest
  • 1g chili powder
Instructions
  1. Wash the baby greens in cold water.
  2. In a bowl, mix the dumpling sauce ingredients (except for the lemon zest and chili powder). Add the lemon zest and chili powder into the sauce mixture. Let it rest for 30 minutes and pour through a strainer.
  3. Fry the dumplings in a pan coated with oil.
  4. Add olive oil, lemon zest, salt, and pepper to the baby greens and toss well.
  5. Place the dumplings on a plate and garnish with the baby greens. Serve with the sauce.
