Paleo Coconut Chocolate Chip Cookies

Ingredients
  • 1 cup almond flour
  • 1 cup unsweetened, shredded coconut
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • 3 tablespoons coconut oil
  • 3 tablespoons honey
  • 3 teaspoons vanilla
  • 3 tablespoons coconut milk, or soy, almond, or any milk of your choice
  • ½ cup chopped walnuts
  • ⅓ cup cocoa nibs (optional)
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine almond flour, shredded coconut, salt, and baking soda, mix together fully. Create a well in the dry ingredients.
  3. Melt coconut oil and honey in the microwave for a few seconds.
  4. Pour into the well, add vanilla and mix.
  5. Pour in milk and stir until combined.
  6. Gently incorporate walnuts and cocoa nibs.
  7. Line a baking sheet with parchment paper or baking mat.
  8. Bake for about 12 minutes until slightly browned.
Notes
You must use unsweetened coconut otherwise the shredded, sweetened kind doesn’t soak up enough moisture and the cookies are pretty gooey. If this happens, you can add a bit more almond flour. I use more of a dehydrated, unsweetened coconut rather than the flakes, but any unsweetened variety should work great!
