Adapted from The Runners World Cookbook recipe for Coconut-Lime Mussels, this recipe is quick, simple, and full of flavor and nutrients.
Ingredients
2 pounds shrimp
1 can (13.5 oz.) coconut milk
Juice of 2 limes
½ cup fresh cilantro, coarsely chopped
1.5 teaspoons red pepper flakes
Instructions
In large saucepan over high heat, combine the coconut milk, lime juice, cilantro and pepper flakes and bring to a boil. Let it boil until it's cooked down a bit in order to thicken the sauce.
Add shrimp -- cook until shrimp are pink.
Serve over rice, quinoa or couscous.
