Fun Time Summertime Salad

Quick, easy fresh and nutritious! Summertime party food at its best!
Ingredients
  • 20 oz. package Three Bridges Spinach and Cheese Tortellini Value Pack
  • 1 cup red and yellow bell peppers, diced
  • ½ cup feta or goat cheese, crumbled
  • ¼ cup fresh squeezed lemon juice
  • 4 cloves garlic, minced
  • ½ cup basil leaves, torn
  • salt and black pepper to taste
Instructions
  1. Place all vegetables in a bowl and toss with oil, lemon, juice, garlic, cheese and salt and pepper.
  2. Cook pasta according to instructions on package. Drain pasta and toss with vegetables.
  3. Adjust seasoning with salt and pepper and toss in basil leaves. Serve and enjoy!
