Sweet Potato Pancakes

It takes just four ingredients to make these delicious high-protein sweet potato pancakes.
  • 1 cooked sweet potato
  • 2 eggs
  • 2 tablespoons peanut butter
  • ΒΌ teaspoon baking powder
  1. Mix all ingredients in bowl. Mixture will be lumpy.
  2. Cook on a skillet or griddle and enjoy!
  3. Serve topped with a sprinkle of cinnamon and a side of turkey sausage.
