5-Minute Asian Salad

Five minutes is all you need to make this delicious and Paleo-friendly Asian salad!
Ingredients
  • 1 large zucchini
  • 1 large cucumber
  • 4 tablespoon of toasted sesame oil
  • 1 tablespoon of rice vinegar
  • Dash of salt
  • ½ teaspoon powdered ginger (adjust to personal taste. I like ginger!)
  • Finely diced leek or green onion to taste
  • 1 clove of fresh garlic (pressed or finely chopped)
Instructions
  1. Spiralize the zucchini and cucumber.
  2. In a blender or food processor, combine the remaining ingredients to make a dressing.
  3. Pour dressing over the zucchini and cucumber and gently toss to coat.
  4. Eat up!
