5-Minute Asian Salad

- 1 large zucchini
- 1 large cucumber
- 4 tablespoon of toasted sesame oil
- 1 tablespoon of rice vinegar
- Dash of salt
- ½ teaspoon powdered ginger (adjust to personal taste. I like ginger!)
- Finely diced leek or green onion to taste
- 1 clove of fresh garlic (pressed or finely chopped)
- Spiralize the zucchini and cucumber.
- In a blender or food processor, combine the remaining ingredients to make a dressing.
- Pour dressing over the zucchini and cucumber and gently toss to coat.
- Eat up!
